banana breakfast cookie

This morning I made the best oatmeal breakfast cookie yet!  Honestly, I thought this was going to be a major fail, but I loved it.  This was a bit heftier than the typical oatmeal b-fast cookie.  It was about 1” thick and softer than the original.  I wanted to try adding mashed banana to the mix.  It made the cookie softer than the original and oh so delicious.  There were a few other modifications as well.  I’m not exactly sure where this originated, but I think I first saw it on Tina’s blog.  So, I will say my adaptation is based on Tina’s version.  :)

Banana Oatmeal Breakfast Cookie

  • 1/4c + 1T rolled oats *I like using rolled much more than instant for this
  • 1/2-1t cinnamon
  • 1t vanilla
  • 1-2t maple syrup
  • 1/2 medium banana [3” worth of banana]
  • 1/4t baking powder
  • 1 egg white
  • 2T chopped walnuts
  • 1T almond milk [any milk would work]
  1. In a small bowl [about 5” diameter] mash banana with a fork.
  2. Whisk in egg whites.
  3. Add other ingredients and mix well with fork.
  4. Microwave for 1min 30sec – 1min 45sec.

Topped with: Vanilla Maple Almond Flax Butter + Crofter’s Organic strawberry fruit spread

The nut butter is hard to see but it’s to the left of the jelly! :)  I really loved the texture of this.  Like I said it’s softer, but still does not fall apart.  Definitely fork food and not really finger food like the original can be.  The cinnamon/walnut/banana combo was delicious.  This is such a great breakfast when you’re crunched for time in the morning.  Packed with real food and a lot of healthy fats, protein + fiber.

This breakfast helped fuel my morning swim.  It was my furthest swim yet!!

  • 100m warm up
  • 1250m freestyle
  • 500m breast stroke
  • 500m freestyle
  • 50m cool down

= 1.5 miles in 55min!!!!!!!  I had to count to 96 [lengths] for this workout…yikes!!  Oh, and there was definitely second breakfast and 2 lunches.  Swimming makes me SO HUNGRY!

foundt this on pinterest- made it and repinned it! topped with pb and baked it instead- loved it and so did my oatmeal hating, banana bread hating 8 year old! thanks for the recipe. 8 year old suggested adding a few chocolate chips to make it even yummier.
