just letting you know…

I’m really excited to show you a few DIY gifts I’ve been working on.  However, I have to wait another day because they’re being gifted at our family Chanukah party tomorrow and I don’t want to give anything away. :)  So we’ll just talk about breakfast.

I made another banana scramble before leaving for the airport on Thursday.  I’m enjoying these even more, since refining the recipe!!  Definitely a must try and very kid + adult friendly!

Also, SO many of you commented how the banana scramble looks like a burger!  I thought this was hilarious but very true.  Time to rename the banana scramble to banana burger!

And I just wanted to let the banana haters know….this works just as well with applesauce and I’m sure pumpkin would work too!  We were out of bananas and I was craving the breakfast scramble burger.  I figured applesauce would probably work the same and it did.

When I took the photos, my tripod was still packed + up in my room.  I was too hungry + lazy to go get it, but I took the photos anyway.  They are so much worse!  Since I can’t lower the shutter speed enough when hand holding, I can’t get as nice of a depth of field, or as crisp a photo as with the tripod.  Wow!  Huge difference.

Check out the difference between this photo and the first one!  The lighting was definitely a bit different and this plate is a little more distracting, but major major difference.

My mom still had some of my maple cinnamon almond butter in the fridge from my last trip home, so I slathered this guy up!!

Apple Breakfast Burger

  • 3T rolled oats
  • 3-4T unsweetened applesauce
  • 1T ground flax meal
  • 1T milk
  • 1/2-1t cinnamon
  • splash of vanilla
  • 1T unsweetened coconut
  1. Heat + grease a small pan over medium.
  2. Mash everything in a bowl until it comes together.
  3. Plop into pan and form into patty with a spatula.  About 3/4” thick.
  4. Cook on each side, until browned, about 3min.
  5. Eat on an English muffin, with toast, or plain.

If you want to add nut butter, but don’t want it to be as messy, just add nut butter to the mix before cooking. :)

Off to bed…it’s 1:30am!  I’m on Mountain time…and it seems my mom is too.  She’s still wrapping gifts!
