just oats
February 1, 2010 Please excuse this extremely short post! I was super busy today searching and applying to jobs and finishing up the “ingredients” tab.
We had another beautiful sunny day but I stayed inside for a change. I had a lot to get done!
Fluffy Sweet Potato Oats:
- 1/3c oats
- 1/3c water + 2/3c rice milk
- 3/4 mashed banana
- 1/2t cinnamon
- 2 egg whites
- 1/3c pureed sweet potato
Toppings:
- handful Nature’s Path Ancient Grains cereal
- handful of almonds
- glob of almond + pnut butter
- 4 berry jelly glob
- pumpkin butter glob
- unsweetened coconut
How convenient! I pulled out a Cooks magazine and it had sweet potaters on the cover!
I really loved the sweet potatoes in the oats. It made them even creamier than when pumpkin is added. I used carton egg whites that are organic, free-range. It definitely had a different consistency when poured out and when cooked in the oats. I hate wasting all of the yolks but once this carton is done I think I’ll go back to using the fresh eggs. The consistency + taste are better.
However, this bowl was completely delicious :)

That bowl of oats looks amazing! You combined some of my all-time favorite things: oats, sweet potato, almond butter, peanut butter, and cereal. I bet it was delicious.
