Before we got to the mountain…here is a recap of the morning:

7:30am alarm

Ashley:  Heeey…chris…wake up…

Chris: mrrrrrrrrrrrr

Ashley: Do you want to go to zee mountains?

…. pass back out ….

8:15am

Ashley:  What should we dooooo

Chris: What do YOU want to doooo

Ashley: mrrrrrrr….[ashley struggles out of bed] Go to zee mountains!

Needless to say we got a late start and didn’t leave til about 9:10am.  That’s okay we just wanted to go up for a few fun hours…Before we hit the road I prepared breakfast.  The night before I packed pb+j samiches and granola bars.  Did you know you can make overnight oats and you don’t have to wait overnight to eat them!?!?  I made them 30min prior to leaving and they were fab-u-loso!

I made Chris an amazing burrito concoction x2.  It went a little something like this:

  • 1 tortilla
  • 1 eggs
  • provolone cheese
  • s+p
  • leftover black bean chili
  • hot sauce

= best wife ever

Cinnamony Overnight Oats:

  • 1/3c oats
  • 1 banana
  • 1/2T chia seeds
  • 1/2t cinnamon
  • vanilla splash
  • 1/3c milk
  • 1/3c plain greek yogurt

And then right as we were about to leave I had the best topping idea ever to happen on overnight oats.  WHOA!

It may not look pretty but I can’t even tell you how delicious it was.  With the oats being cold, it formed a semi-hard shell but still melty…ohhh my, I need to stop typing about it!!! 

1T peanut butter + 1t Artisana Cacao Bliss [chocolate/coconut butter] –> microwave + pour on top 

These oats made me “mmmmmmmm” out loud.

We hit some crazy weekend traffic that was a little unusual for a Friday, so it took us over 2hrs to get to Breckenridge instead of just 1hr 20min…daaaang that is annoying.  We had an easy day on the mountain, nothing like this past Sunday, but somehow today I manage to take a terrible tumble.  It went a little something like this:

Carving through powdery snow that was pushed around [not groomed] –> I caught the front of my board in the snow –> up in the air –> turn around –> fall facing UP the mountain on my low back –> bounce –> crunch on neck –> slide a good 20’ –> waaaaaaaaaaaah

I’m okay..don’t worry…good thing for my helmet!  I’m definitely going to be quite stiff for the next few days..I can already feel it setting in….Advil + heating pad please!

After that, I was DONE.  We did get to see one of our good friends from OSU, that currently lives in Nevada, at the mountain today.  That was right after I fell, so I was in a stellar mood, hehe. 

On the way home I ate my samich…

I wanted something simple for dinner…my stomach was feeling a bit off.  Ummm…let’s see…..EGGS? Duhhhh

  • 3 eggs – pour, poke, spread method…obviously!! I forgot to mention cover the pan with foil.  This will ensure your eggs cook without having to scramble them :)
  • 2 pieces of italian toast…because sometimes you just need the white stuff
  • THE BEST banana of my life

The question is…..why wouldn’t you pour this all over a banana!??? [pb + cacao bliss x2 today…I told you it was good]

I think this was  This was my favorite dinner of the week.

I was supposed to go to the mountains again tomorrow bright and early [5:45am eeeek] however, my body is saying “no way.”
