two firsts

So I have seen savory oats about the blogosphere a few times now.  I decided it was time to man woman up and see if it’s something I like. 

I present you with Oats + Eggs  - I realize this probably sounds unappetizing but if you think about it oats are similar to rice.  You can make sweet dishes with rice, like rice pudding and you can obviously make savory dishes with rice.  So keep an open mind :)

Obviously I used my farm fresh eggs that are just oh.so.amazing.

So what’s in the mix?  Did I like it?

Oats + Eggs

  • 1/3c oats
  • 1/3c almond milk, 2/3c water
  • 1/2T chia seeds [mixed in the beginning]
  • 1/3c cottage cheese [mixed in the end]

Topped with

  • 1 sunny side UP egg
  • shaved aged cheddar goat cheese
  • s+p

First off.  I LOVE LOVE LOVE sunny side up eggs, especially with toast + butter.  I definitely enjoyed this bowl of oats.  The cheese gave nice flavor and the gooey egg was awesome with each bite.  I liked it a lot more than I thought I would…howEVER I missed my pnut butter and was CRAVING it after this bowl.  This was good, but it would be more of a lunch bowl than breakfast.  Maybe once in awhile when I’m in the mood for a savory breakfast…but you probably won’t see this too often.  I urge you to try it out though!!

Frozen organic peppers are SO underrated.  They are perfect to add to any dish you normally would [except maybe a fresh cold veggie samich].

Sautéed 1 portabella, frozen peppers and a little olive oil.  Topped on an Ezekiel sprouted tortilla with a little provolone.  Baked in the oven at 350* for about 5-10min and topped with 1/2 of an avocado.  No sauce, so s+p…just veggie perfection with a little cheese :)

My homemade week started early!!!  Any guesses what I made??  It was another successful first for me.  Full disclosure tomorrow!

p.s. I’m feeling much better tonight…after a LOT of sleep last night and a big nap this morning I think I’m already cured.  I can barely say that I was sick…it lasted for about 24hrs..lets hope it stays away!

Um, I LOVE LOVE LOVE sunny side up eggs with butter and toast. Best way to eat eggs.

i trust you, but i'm still scared thinking of savory oats :) i think i might have a taste aversion to that. however, I do love veggie perfection with a little cheese ;)

That breakfast looks great! I might substitute something like sour cream or laughing cow for the cottage cheese. Any suggestions? Have a great day!

My favorite savory oats combo includes what you did, AND hot sauce. YUM! I think you made something with almond butter...not just the straight up almond butter, something WITH it :)

Hey girl! I would say that you could definitely cut up some laughing cow and mix it in at the end...OMG that would be cheesy + amazing. You could also mix in 1/3c plain greek or non-greek yogurt instead of the cottage cheese and that would be a little more nutritious than sour cream. I love cottage cheese but not sold on it in my oats ;)

I'm going to say almond milk? Or nut butter, but if you haven't tried homemade almond milk you really need to give it a go! So great and easy!

I haven't tried this yet!! I have tried just the egg whites. But I should. I should start buying whole free-range eggs and eating just one, instead of the egg whites in a carton (I have high cholesterol, genetic, so I try to avoid the yolk) but something tells me theres something really not right about those egg whites in a carton....

I think the oats look good! I keep an open mind and try them *sometime*. We all know I'm not too reliable in the kitchen!

i actually tend to eat savory oats more for dinner than breakfast - i crave the peanut buttery banana oats in the morning...plus i can't really fry an egg at work ;)

Just a tip...if you roast your almonds first they'll take a lot less time in the food processor. :) Coming from someone who loves to make homemade almond butter!

I'm the kind of person who knows how good oats are for me and really, truly wants to eat them for breakfast, but more often than not I wake up craving savory foods. This dish would be the perfect solution; I can't wait to try it!
