short + sweet

I LOVED reading about all of your creepy gym encounters!!  I knew I wasn’t the only one with stories :)  Today was quite busy and tiring.  I woke up every 15min for about 2hrs before I had to get up.  Don’t you hate that??

I was in a rush this morning to make oats, get to the farmers market, then head to work.

Oats rocked.

Muffin Topped Oats

  • 1/3c rolled oats
  • 2/3c almond milk, 1/3c water
  • 1/2 sliced banana
  • 1 egg white
  • vanilla
  • 1/2t cinnamon

Topped with

  • 1/2 vegan blueberry muffin [from yesterday]
  • ~1T pnut butter

Super creaminess!!  These muffins are SO good.  I can’t wait to perfect them so they hold together a little better.  The flavor rocks.

I had to get my weekly fresh eggs.  Once you start with this fresh egg habit…it’s hard to revert back.

Today was exciting.  I was in a hurry but browsed by and saw some GREEN things popping up!!  There were a lot of micro greens and also this gorgeous asparagus.  It is local + organic and I’m pretty excited about it.

Asparagus takes around 3 YEARS to harvest!  Isn’t that crazy??  I just learned all about growing asparagus in the book I’m reading, Animal Vegetable Miracle.  Anyone read this yet?  The woman at the market said they use a drip irrigation system and it took 4yrs for this to start popping up!  I’m going to savor it.  I love being able to support the local farmers that take so much time to grow such delicious, pure food.

Then I had to work and it was crazzzy today!  Non-stop go go go go gooooooo. 

Snacked on an apple and pistachio coconut butter when I got home then headed to meet up with Chris and some friends.  I finalllllyyyy at a late dinner at 11pm.

Hoping to make 1 or 2 kitchen creations before work tomorrow, but we’ll see!

I despertely want to make some of that pistachio butter - it looks like pesto, but sounds better :D

omg. animal vegetable miracle is one of my all time favourite books! i found it 2 years ago through this random book share thing, read it and immediately went out and bought myself a copy (and several other copies to give away to friends and family!). i reread it again every spring to get myself excited about living local.

last year when i was at the boyfriend's parents' farm in may/june, i got to see the asparagus field in action!! those guys are so funny looking, popping out of the ground. delicious though.

Love Animal, Vegetable, Miracle...A real perspective changer. We should all eat more local...Go farmers! And enjoy your asparagus and eggs!

I love Animal, Vegetable, Miracle! It was one of those books where every few pages I HAD to share an excerpt with someone. I love Barbara Kingsolver. I love how asparagus plants get hug and feathery and tall after they go back to seed. I can't wait until I plan to live somewhere long enough to plan asparagus.

I can't remember if I've commented on your blog before or not -- I've been reading it for a few weeks and love it! Your pictures are total food porn! Judging by your oatmeal style I'm pretty sure we would be friends :)

I LOVED Animal, Vegetable, Miracle. Such an inspiring book to me. I also read it every spring to get me motivated for my own veggie garden. Tried a few recipes in there also, and all were wonderful. So fresh!

That is beautiful asparagus! So jealous!

I didn't know that about asparagus! Now I kind of feel bad because I eat soooo much of it! I'm digesting years of hard work without a second thought!

i need asparagus now that your pictures inspired me :)

Those asparagus and eggs are BEE-utiful. I just bought fresh farm eggs from a local natural foods store, and they were not nearly as fresh as I was hoping :( Runny whites and all, but they were all funky shapes and colors, so I guess that's good.

We shop at Farmer's Markets too, and I agree, this time of year when fruits and veg that aren't apples and root vegetable (yay Canada!) start to pop up is wonderful!!!

I am reading Animal, Vegetable, Mircale as well. I'm about 1/3 of the way through. I loved reading all about asparagus in the beginning! And now I want to move to a farm and grow my own food :)

Those eggs look prime for poaching...although by now, it's been built up so much that you probably won't be too impressed.
