ak-melon-naner-slurp

Our friends are here!!! Bites + Bowls and her mister friend!!  We used to live right down the street from E + K and miss them so much!!  We’ve known Eric for a few years now and have known Kelsey for about 1 year.  I’m excited to have them around for the week :)

It’s been a busy day preparing for them!

BreakfastBanana Scramble – quick.easy.nutritious.delicious.

Cinna Chia Cacao Banana Scramble

  • 1/2 banana

  • 1-2T pnut butter

  • 1/2-1t cinnamon

  • 3T oats

  • 2T milk [any type]

  • 1/2T chia seeds

  • 1T unsweetened shredded coconut

  • ~1/2T cacao nibs



  1. Mash with a fork, until well combined.

  2. Heat + grease a pan on medium heat.

  3. Plop into pan and flatten a bit.

  4. Let sick + cook for 3-5min.

  5. Flip or mash around and cook another 3-5min until browned.

Then it was time to start cleaning.  I had to make a new batch of my cleaning products as I was almost out of my all-purpose + glass cleaner.  They are so easy to make and I’ve definitely gotten my money’s worth out of the ingredients already.  I also made a bathroom scrub.  Details in this post.

A little squeeze of lemon in the all-purpose cleaner.  It’s the best cleaner I’ve ever used.  LOVE it.

Have you tried these crackers?? They are EXcellent!! I love the flavor and crispiness.  Seriously, so good and the nutritional facts are also great!

In between all of the cleaning, I managed to squeeze in a 16m bike ride.  It rocked.  I also did a quick ab workout + pushups.  What I need to do more of is YOGA.  I got in about 10min today and it wasn’t enough.



The other day I was inspired by a recipe over at The Active Foodie for her Watermelon, Cucumber and Mint Agua Fresca.  I didn’t have mint and just wanted something refreshing after a long day of cleaning in the hot house.  This was perfect!!

Watermelon Cucumber Smoothie

  • 2-3c ice

  • 3-4c cubed, de-seeded watermelon

  • 1/2 large cucumber

  • juice from 1/2 of a lemon



  1. If using a standard blender, you may want to peel the skin off of the cucumber so there is no pulpy cucumber skin.  The vitamix was able to plow through almost all of it.  I didn't mind the few bits that were left, but if you're worried about the skin go ahead and peel :)

  2. Blend until smooth.


I looooved the combo of watermelon + cucumber.  It was really refreshing and I loved the slightly icy consistency.  Chris made a BAD face when he tasted this and said “no bueno!”  ;)  We’re usually on par with foods/drinks we like but not this one.  If you really like cucumber + watermelon give this a try!

Lol....bouldering in Boulder! I'm sure you guys will have a great time, and I personally think the watermelon-cucumber smoothie sounds really refreshing. Kind of gaspacho-esque, I guess?

You would fall head over heals for the cracker bread aisles in Europe. Head to and grocery store in Sweden and the shelves go on and on with healthy, whole grain, amazingly textured cracker bread.

I love those crackers!

I hate cottage cheese by itself and don't really like cantalope by itself but I think I would like the cottage cheese 'lope bowl! :)

oh, i'm so jealous! Boulder is incredible in the mornings...cool and sunny :)

I love AkMaks! I discovered them last year in college and I've been buying them ever since because they have a great nutritional profile and they're pretty cheap.

The smoothie looks really good too, and I don't like watermelon... We did just buy one and we have a ton of cucumber though so I might give it a shot. ;)

Hehehe, I made Dave try the drink too and it wasn't his thing either, I think he was expecting a sweet and thick smoothie - but I loved it! :) Have fun bouldering, sounds so fun!!!

I mean you are hands down the most creative person. Watermelon/Cucumber smoothie sounds like a lotion at Bath & Body Works, but that it would also make a yummy drink.

Sounds like a good bike ride and the smoothie looks so cool and refreshing!!

I've had Ak-Mak before! They are really good, very fibrous too, yum. Fibrous to me = yum, by the way, hehe.

I always laugh at loud at those commercials for the Fiber One commercials, where they're like "oh my god! there is fiber in this?!? so glad I can't taste it" --I WANT to taste the fiber (natural fiber, that is) :)

There's my silly story for the day.

Ok that banana concoction is officially on my weekend breakfast menu - sans chia seeds b/c I don't have them...ehhh.

Also, it's a little difficult to consume a HUGE watermelon between 2 people before it starts to go...and this smoothie sounds PERFECT for my post-LR refreshment tonight. Gracias ;)

I said earlier that the smoothie looks amazing and I wanted to make it after my run tonight. Funny, tho, because now it's after my run and I didn't make it. My husband had commandeered the blender. Boo! But I'm still looking forward to it! Yummmy!

I tried the Chia Banana Scramble this week, it was soooo delicious and hit the spot. I'm going to have it for breakfast tomorrow and my morning snack. I love how easy it is to make and how delicious it taste.

I was so excited to see the watermelon and cucumber smoothie, since I had so many cucumbers to use up that I bought watermelon so I could make it. Though I am without my Vitamix this week {house-sitting and decided to use their mixer}. For most of the smoothies I have made this week, a standard mixer was sufficient, but not for this one. The skin of the cucumber was too much for it to handle and I'm not a fan of the floating skin that the standard mixer couldn't break down.

I'll most likely try it again, but without the skin to see if comes out better for me.

I made this scramble this morning and it was AMAZING! :) Thank you so much for your incredible recipes. Instead of an english muffin I sandwiched the scramble between two whole wheat waffles. BEST IDEA EVER. Please try it!
