clean eats

Hello there!  Last night we were in Denver, at the Love Grown Foods launch party + then celebrating a friend’s birthday.  I’ll fill you in more on the exciting new happenings with LGF tomorrow, but for now a delicious meal.  This should have gone up last night, but my computer wouldn’t connect to the internet at the bro + sis-in-law’s house.  

I’ve seen recipes for cauliflower “rice” a few times recently, so I decided to see what all the buzz was about.  The idea is that you put the cauliflower in your food processor and process until it’s close to the consistency of rice.  Easy enough!

Cauliflower Veggie “Rice”

I sautéed veggies first.

1 leek – 2 carrots – 1 stalk celery – 1 clove minced garlic  [feel free to just use 1 leek or 1 small onion and garlic, carrot + celery are optional]

And I actually used the Vita-mix to grind this to the rice consistency.  I did it in 3 batched and it worked great.

Definitely looks like rice!  It was tasty raw, but I wanted to mix it with the veggies.

The veggies were cooked in a little safflower oil for about 5-8min until just soft.  Then I added in the cauliflower rice and heated for another 2-3min.  If you’re looking to add some flavor, season this however you would like.  I added a little salt + peppe, r, keeping things simple.  You could definitely add soy sauce, or curry, or anything you like!

Eaten alongside a mound of lightly steamed kale.  Extremely nutritious, however lacking a bit of substance.  Need to add some fats!

Enter: avocado + hummus

I spread a thick layer of hummus and mashed 1/2 of an avocado onto the brown rice [gf] tortilla.  Then I added a pile of kale + “rice” mixture + a little salt + pepper.  I lvoed this lunch!  It was extremely fresh tasting + didn’t weigh me down at all.  The brown rice tortillas were pretty good.  If I had to keep gluten out of my diet, I would definitely buy them again. 

Grapefruit on the side for some sweet + sour action!
