a fudgy treat!

Back as promised!!

I have an extremely simple recipe to share with you today.

While reading Heather’s blog the other day, I saw her recipe for 2 ingredient Carob Fudge and was immediately intrigued.  I tried carob for the first time only a few months ago.  It has an interesting flavor slightly similar, but nuttier, than chocolate.  You can read more about carob, hereHeather recently eliminated chocolate from her diet, in trying to help with her adorable baby’s gas problems. ;)

As soon as I saw her post, I knew this simple recipe had to be made!  However, adding peanut butter, was a must!

It has a creamy silky texture, that melts, as soon as it hits your mouth.

This isn’t like traditional fudge.  It’s not quite as thick and definitely not as sweet.  The best part is, it takes less than 10min to make!  Although you do have to wait for it to solidify in the fridge.  Or, you could also just eat it warm + drippy with a spoon!  I did both.

I’m already dreaming of what you could use it on…

  • oats
  • ice cream
  • banana soft serve
  • muffins or cookies
  • smoothie
  • nut butter + jelly sandwich
  • etc!

Peanut Butter Carob Fudge [adapted from HEAB]

  • 1.5c carob chips [or sub dark chocolate chips]
  • 1/2c creamy peanut butter
  • 1/2t cinnamon
  • 1t vanilla extract
  • 1/3t salt
  • 1 can, full fat coconut milk [or 3T coconut cream + 1 1/4c water or 3T coconut butter + 1 1/4c water]
  1. In a medium saucepan, combine all ingredients, and turn the heat on low.  Watch closely so it doesn’t burn!
  2. Stir ingredients until completely melted and combined.
  3. Pour into an ungreased 8x8 pan [you can line with parchment if you like].
  4. Refrigerate until solidified + store in a sealed container in the fridge.

If your first container is too small, add the fudge to another container, and give it to a friend. 

They will love you forever.

Obviously, I HAD to try this on my oats this morning!!

In the mix:

  • Bob’s Red Mill high fiber cereal
  • water + almond milk
  • 1/2 banana
  • vanilla
  • 1t cinnamon
  • almonds
  • unsweetened coconut
  • carob fudge glob!!

I enjoyed this much more than any of the chocolate peanut butters I have tried.

I saw it on Heather's page, too, and my only concern is the coconut milk because I do not like coconut. Do you think I could sub almond milk? or is there even a strong coconut flavor?

Ashley it looks great! I make vegan fudge and vegan frosting with PB, Choc Chips, vanilla, and Coconut Oil. Depending on the ratios, I can get either frosting or fudge out of it...and your fudge looks awesome! I love how sort of fluffy and puffy it is...and yes, any friend you gave that to would be sooo happy!

How do you think this would taste with almond butter?? I love AB much more than I do PB (for some reason peanuts don't agree well with my stomach, I have no problems with almonds though)

Hi Ashley! I will def have to try carob. That looks ammmaazing and fudge in 10 min?? Yes Please! This is the first time I have posted but really dig your blog. I imagine the fudge would be a perfect pair with the Sugar Bowl tonight! Wanted to wish the Buckeye fan good luck, but.... GOOO HAWGS! WHOOO PIG SOOIE!

I think it would work really well and taste great!! Just make sure the almond butter is pretty creamy. It might still have a bit of a grainier texture but I'm sure it will be delicious. :)

I can't taste much coconut. If you really hate the flavor, it might not work out too well. :( Unfortunately, almond milk won't really work because it's so thin. The coconut milk has a lot of fat in it and is very thick and almost solid at when chilled. You might be able to use almond milk + whisk in 1T arrowroot powder [similar to corn starch] to thicken it up.

I LOVE fudge, especially fudge with peanut butter (plus I found a kind that add flax seeds - yay!), but I never eat it because it is usually not a healthy choice and I have trouble stopping at one piece! This looks delicious, and I can't wait to try it!

I've been racking my brain about this and I'm not quite sure. :) Maybe try mixing in 1/4c powder + 1/2c almond milk? Not sure that will work though!

Ashley, I just started swimming and was wondering what you did for a warm-up? Also, how do you keep track of all your laps?!! I do only 20-25 and lose count with that little bit!

I just use the kickboard and do a flutter kick for 50m and a breast stroke kick for another 50m. Then I stretch out my legs a bit in the water. Then my first 250m of freestyle I take it pretty easy and after, stretch out my arms. After stretching my arms, it's amazing how refreshed they feel!! The counting thing gets better with time. It was really hard at first! If I'm swimming all freestyle, I'll spring every 10th length, which makes it a bit easier.
