craving cocoa

I don’t suppress my cravings. 

Instead, I find creative ways to give in to them. 

Craving chocolate?  For breakfast?

My favorite buckwheat breakfast bake yet!

Cocoa Banana Buckwheat Bake [serves 1]

  • 1/4c ground raw buckwheat groats [grind to soft powder in blender or spice/coffee grinder]
  • 1T raw buckwheat groats
  • 1/2 large banana, mashed [~1/3c]
  • 1 1/2t vanilla extract
  • 1/3c unsweetened almond milk
  • 2-3t maple syrup
  • 2-3t unsweetened cocoa powder
  • 1 flax egg [2.5T warm water + 1T ground flax meal, whisked] or 1 egg white
  • 1T chia seeds
  • 1/4t baking powder
  1. Preheat oven to 350*
  2. Whisk flax egg together and set aside for ~3-5min.
  3. In a small bowl mash banana until egg-like.
  4. Mix in almond milk + vanilla with a fork.
  5. Mix in buckwheat, buckwheat groats, cocoa powder, baking powder, and chia seeds.
  6. Mix in flax egg.
  7. Lightly grease a small oven-safe dish, add mixture, smooth, and bake for 30 minutes. [I used a personal size soup crock]

*If you don’t have buckwheat, you can sub 1/3c rolled oats.  Steel cut oats do not work well for this.  I haven’t experimented using oat bran yet.

Wow, this looks super delicious! When you say we can use rolled oats instead of buckwheat groats, do you mean ground oats (for ground buckwheat groats) or not?

I just got a bunch of raw buckwheat, thank goodness! Now I can make this:) Before, I only had kasha which I don't like the flavor of that much. Problem solved!

I always give in to my cravings too! If I want chocolate for breakfast, then I mix a little cocoa powder into my oatmeal - it's delish!

I am loving your breakfast bakes - I am GOING to try one this weekend!! It's hard during the week because usually I take my breakfast to go, but I could also make them in advance - do you think they would be good the next day heated up?

I want that bake ASAP! I'm all about satisfying my chocolate craving any time of the day. Breakfast does seem like the perfect time :)

Yum! I'm glad you used cocoa in this one because I was having trouble locating carob powder. Now I can have a chocolate breakfast bake. Yipee!!!

Yum! I love adding cocoa powder to my breakfast. I think it adds such a nice rich flavor without a sugary crash. Adding a dash of cinnamon or expresso powder really makes it pop! I really need to get some buckwheat so I can make this; I think I need a little something different than oats every once and a while. Also, I LOVE the idea of popping amaranth. I'm a huge fan of millet puffs so I'm sure I'd like this, too.

Do you need a high powered blender for the buckwheat? I have a regular one, not a VitaMix. I also noticed that my Whole Foods carries the buckwheat in the bins but they were out when I went last week. Very curious to try.

Ashley. No joke. I just said "YUM!!!!!!!!!!!!!" out loud. And one of our secretaries was like: "Uhhhhhh??????" Hahahahahhaa. This looks better than good. I need to buy some buckwheat flour. I know I could just sub in some WW . . . but the buckwheat with the chocolate goes so well!

HAhaha, too funny!! I actually don't know what would happen with WWF, since buckwheat doesn't have any "wheat" in it. It might turn out totally different! Also, I have tried Arrowhead Mills buckwheat flour and it was TERRIble. The flavor was so so strong and gross and I have no idea why. I just grind it into flour in my blender from the raw buckwheat groats. If you see Kasha, that is the toasted version of buckwheat, and almost tastes burnt...so don't get that. ;)

I'm not positive on this. I highly doubt it. You could always just try grinding 1/2c and see if it works. It should at least turn it fairly powdery/soft which will work. Make sure you get the raw groats and not Kasha, which is the toasted version. It tastes burnt! :)

I usually add cinnamon but wanted to keep this plain cocoa. I will definitely make an espresso cocoa version though!!! I bought millet puffs before and loved them, but just tried popping them and it didn't work. I've only had success w/popping the amaranth. Weird!
