peanut butter love

Happy Valentine’s Day lovely readers!

Today is my EIGHTH year dating anniversary with Chris!!  We still like to celebrate our dating anniversary, because it’s when everything started.  No big plans though.  We’re just making dinner together, which is one of my favorite things to do!

Now, I’m going to show a little love to one of my most favorite foods!

Peanut butter.  Oooh la la

My all time favorite cereal, might just be Peanut Butter Crunch.  I’ve given up the Cap’n and switched to the Barbara’s or EnviroKids a few years back.  All are delicious, but none that healthy.

Peanut butter slathered oatmeal is indeed delicious, however I miss the cold cereal crunch.

It’s not quite as crunchy, but will surely do!

I now introduce you to Peanut Butter Puffmaranth!

(1 of 3)

If this doesn’t make you fall in love with popped amaranth cereal, I don’t know what will.

(2 of 3)

Peanut Butter Puffmaranth [serves 1]

  • 1/4-1/3c amaranth
  • 1.5T peanut butter
  • 1.5c unsweetened almond milk
  • 2t maple syrup
  • 1/4t cinnamon
  1. Make popped amaranth according to directions.
  2. Stir in cinnamon.
  3. In a bowl whisk almond milk, maple syrup + peanut butter together, until fully combined. [You could also quickly throw it in a blender, or use an immersion blender as well]
  4. Pour over cereal + dig in.

Topping ideas: salted peanuts, banana, coconut, raisins, chocolate chips, etc.

This made me very, very happy.  A huge bowl of cereal that tastes delicious and is nutritionally stacked.  It keeps me full as long or longer than oatmeal.  Outrageous!

(3 of 3)

Thanks for weighing in on our kitchen decision.  It was fun to hear what everyone had to say.  The color palette we like the most is the Calm, Clean + Light!  I would say it was split 50/50 on what people liked the most.  I’m so glad Chris + I have the same taste style-wise.

[also…the tile floor looks slightly blue here, but it’s definitely charcoal and the granite has no blue in it either…the blue will just be in the backsplash]

(10 of 11)

Besides just liking this color scheme more than the brown/beige, here is some of our reasoning…

  • the kitchen is very small, so white cabinets will make it feel much larger than dark wood with the brown/beige scheme
  • the blues, whites + grays give a light + clean feeling, which will help make for a brighter kitchen, which is also good for a small space
  • it’s different, fresh, calming + fun
  • definitely speaks more to our style, clean + contemporary…the beige look is a little too “safe” ;)
  • the charcoal tile floor will make crumbs more apparent, which is a good thing, so I see to clean them up…they’re more likely to blend in on a light floor
  • the charcoal floor will help hide Kenna’s black hair

Check back later tomorrow for another detox recap…it’s been 5 weeks! [3 weeks detox, 2 weeks dairy reintroduction]

Off to catch some zzz’s….

Hope you have a lovely day!

Ashley

you two started dating on valentine's day? I actually have a first day today! Maybe it will turn out as well as yours did with your husband :) wish me luck! I was nervous that valentine's day wasn't a good idea for a first date, but the more I thought about it, I think it puts a more romantic spin on things and makes it a bit exciting. All I can hope for is a good time :) And at least I'm not alone on Valentine's day! :)

I love all your reasoning for the colors you chose, specifically that beige was a little too safe. Sometimes you just gotta go with the edgier option in life! In kitchens and otherwise :)

Congrats on your 8 yr dating anniversary!

February 14, 2011 | Unregistered CommenterAverie (LoveVeggiesAndYoga)

happy valentines day.

i've got to say, i love those tiles.

February 14, 2011 | Unregistered CommenterLaura (Starloz)

I bought amaranth yesterday at Earth Fare!! You could say I'm a little excited about trying it "puffed!"

Happy 8th Anniversary!! I hope you have a fun day planned.

Love those colors- I they will look amazing! Happy anniversary!

February 14, 2011 | Unregistered CommenterJessica @ How Sweet

I hear you on the addiction to PB cereals. I really cant buy a box of PB Puffins without expecting it to be gone in 2 days. LoL Glad you went with that option for the kitchen. It's going to look fantastic!!!

February 14, 2011 | Unregistered CommenterLauren

I am salivating over that Puffmaranth. Cereal is my one true love, sorry boyf.

February 14, 2011 | Unregistered CommenterKatey (Bonne Santé)

I just dropped my jaw a bit when you said it had been 5 weeks since the detox! Holy cow where does time go?

Love the colors you chose - I guess I play it safe with my color options. :)

i think the extra considerations make all the difference...white really does make it look so much larger!

February 14, 2011 | Unregistered CommenterHeather (Heather's Dish)

Breakfast looks amazing as usual! And I really love the color choices you chose. I think it'll look great :)

February 14, 2011 | Unregistered CommenterGina

Happy dating anniversary! My husband and I still celebrate ours -- our 3 year date-a-versary was exactly a week ago!

Love how you're using amaranth -- it's so much easier to find in the stores now! About 10 years ago I could only find it in the health food store I worked at, but now I'm glad to see it in the bulk aisle in whole foods -- it's a lot cheaper that way! I wonder how it'd taste with almond butter?

February 14, 2011 | Unregistered Commenterlauren @ spiced plate

Your breakfast looks amazing! I love peanut butter.
Glad you went with the blue.

February 14, 2011 | Unregistered CommenterMaddie (Healthy Maddie)

February 14, 2011 | Unregistered CommenterElizabeth@The Sweet Life

This might just make me buy some amaranth on my next trip to the natural foods store. Mmmm peanut butter. A day just isn't complete without it!

And I'm so glad you're going with the blue color scheme! It is so pretty

aw, here's to you and Chris :) Hope you enjoy your night! There's something so much more special about cooking a meal together than going out to eat. Can't wait to hear what's on the menu :)

February 14, 2011 | Unregistered CommenterJenny

you should check out the website houzz.com.....it is sooo amazing. they have different idea books ie: spice up your tile, or kid's playrooms, outdoor spaces, etc. what is really great though is you can create an account (free) and when you click on each picture you can save it to your own ideabooks that you can categorize and you can make notes about each picture ie. i liked the faucet in this kitchen, etc. it is so inspiring and free!!! :)

YUM! As a fellow Envirokids & Puffins peanut butter cereal lover--this is a must try! :)

Happy dating anniversary! <3

February 14, 2011 | Unregistered CommenterStefanie @TheNewHealthy

Love the colors you chose for your new kitchen! We opted for painted cabinets too - just be sure whatever brand you choose that the finish is baked (heat fired) on. Makes for a much more durable finish.

February 14, 2011 | Unregistered Commentermarcella

Happy dating anniversary!! That cereal sounds just perfect. I always put peanut butter on my cereal, but I love the idea of whisking it into the milk!!

February 14, 2011 | Unregistered CommenterChristin@purplebirdblog

Yum your cereal looks so good! Good idea on mixing the PB in with the milk. So smart : )

Happy Valentine's Day and Happy 8 year anniversary! So exciting : )

February 14, 2011 | Unregistered Commenterdana @ my little celebration

Awesome recipe, perfect for the breakfast and so nutritive too...i love the combo of peanuts and butter, shall give it a shot soon !

February 14, 2011 | Unregistered Commentersonia

We still celebrate our dating anniversary too.Just yum on the cereal recipe, that sounds wonderful!

And great kitchen colors, our kitchen is in blue too and it's bright, but relaxing. And we have dark floors that rock at hiding dirt and pet fur. :-)

February 14, 2011 | Unregistered CommenterChristine (The Raw Project)

eight years! you two are so lucky :) congratulations! and your cereal looks mouth drooling-ly delicious. i currently have no peanut butter but i do have amaranth...and a new motivation to go get me some pb! thanks for the recipe, ashley :)!

February 14, 2011 | Unregistered Commenterzoe (and the beatles)

Yay, I'm glad you picked the blue! Agreed, beige is too safe. And I'm thinking of making a big batch of this PB milk. :)

February 14, 2011 | Unregistered CommenterMichelle

Happy Valentine's Day! I love the color scheme you chose for your new kitchen. It's perfect. Enjoy your day with Chris - 8 years is fantastic! :)

February 14, 2011 | Unregistered CommenterDorry

I'm totally adding cocoa powder to that to make Reese's Puffs!

February 14, 2011 | Unregistered CommenterCasey @ Insatiably Healthy

Happy dating anniversary! 8 years is something to be proud of. Oh my gosh, I loveee Peanut Butter Crunch. I am going to give this a try ASAP! Thanks.

February 14, 2011 | Unregistered Commenterjanetha

I love the colors you picked out!

And if today is your 8 year anniversary, that means your first date was on V-Day? Or you became "boy friend/girl friend" on V-Day? Cute either way!

February 14, 2011 | Unregistered CommenterHolly @ couchpotatoathlete

I'm so glad you went with that color. You're right, beige is safe - and I can say that because my whole house is beige. It's screaming for a makeover, but that will have to wait.

Happy anniversary! I love the idea of adding nut butter to milk before adding it to cereal. Great way to increase protein!

February 14, 2011 | Unregistered CommenterLeanne @ Healthful Pursuit

Mmmm, I love anything containing peanut butter, so i'll have to give this a shot! What I need to do realistically first is get me some more amaranth! :)

February 14, 2011 | Unregistered CommenterNamaste Gurl

I definitely play it safe with the colors but thats awesome you chose the blue! Happy v-day and congratulations on 8 yrs!

February 14, 2011 | Unregistered Commenterkate@ahealthypassion

Happy dating anniversary! Can't wait to read abbot the renovations.

February 14, 2011 | Unregistered CommenterKiran

Don't know if we are still talking about design, but with an awesome backsplash like that you would probably be happier with a solid color counter. Your splash is linear as will the tile be and the granite may be too busy next to those lines. The best way to let the splash be the star is to stay solid with the counters. Ever considered poured concrete? Give the eye a place to rest which should be that amazing glass tile. Can't wait to see the redo!

February 14, 2011 | Unregistered CommenterSandy

I totally understand what you're saying, but I think with all white cabinets, it will look really plain + too solid, if there isn't a little movement with the counter. I do love concrete countertops and still are considering them, but will most likely go with the granite. I think the concrete + all white cabinets might make things look too "cold" as well, even though I know you can dye the concrete. Thanks for bringing this up though...will definitely be thinking about it more!

February 14, 2011 | Unregistered CommenterAshley

It's in the grain family and is teeny tiny compared to quinoa and a little earthier in flavor. However, when you pop it, it has a much more neutral flavor. http://en.wikipedia.org/wiki/Amaranth http://www.amazon.com/Bobs-Red-Mill-Amaranth-24-Ounce/dp/B000V1O40U

February 14, 2011 | Unregistered CommenterAshley

Yaaay, so glad!!!

February 14, 2011 | Unregistered CommenterAshley

Thanks Ellie!!

February 14, 2011 | Unregistered CommenterAshley

Awesome idea!

February 14, 2011 | Unregistered CommenterAshley

So many things you could do with PB milk.....drink it, pour it on oats, pour it on cereal....bathe in it..hehe
