I repeated the same recipes for the beans + tater and veggie mix. Roasted in the oven, because we’re out of grilling gas!
I wanted to make enchiladas, stuff them with the taco mix, and drown them in enchilada sauce.
I’ve never purchased enchilada sauce before.
So, I figured my first time using it, I should make it.
Thanks to Emily for her super quick Enchilada Sauce recipe! Doubled it + freezing some of the leftovers.
Birthday present for the boy.
The Ansel Adams print was a Christmas gift + it needed a frame!
I mounted + framed it today. Quite pleased with how it turned out.

Flour + corn, stuffed with taters + beans, covered with sauce, veggie mix + cheese.
Baked at 350* for 30min.

I made enchiladas last night. The "sauce" I used was leftover black bean soup that I made the night before. Got the idea from Rick Bayless' website. I'm eating the leftovers right now so just thought I'd share. Looks like you guys had fun - your house is looking good. I need to get a doughnut pan!!

The potato + bean stuffing went over reallllly well. The potato texture is awesome! You have to make the enchilada sauce recipe...delish!

Thanks Sylvia. You definitely need to try the sauce...it was amazing and seriously super easy! Unfortunately the Boston Cream donuts are my least favorite. :( I'm all about the cakey kind! I'll have some fall donuts coming soon though!
