Remember Taco Night, Done Right?

photo 5 (10)

I repeated the same recipes for the beans + tater and veggie mix.  Roasted in the oven, because we’re out of grilling gas!

(7 of 35)

I wanted to make enchiladas, stuff them with the taco mix, and drown them in enchilada sauce.

I’ve never purchased enchilada sauce before.

So, I figured my first time using it, I should make it.

Thanks to Emily for her super quick Enchilada Sauce recipe!  Doubled it + freezing some of the leftovers.

(8 of 35)

Birthday present for the boy.

The Ansel Adams print was a Christmas gift + it needed a frame!

I mounted + framed it today.  Quite pleased with how it turned out.

Including Kelsey’s, ridiculously amazing, Chipotle impersonator guacamole.  Better than my last batch from Chipotle.  No joke.

Extra large birthday card.  [mounted it to foam board, which I had to tape to the frame b/c the original back-piece wouldn’t fit]

Seriously. I need to live close to you for my next birthday. Or, you need to just be a party planner that I can hire :)

Looks like you had a wonderful birthday! Happy belated and may you have a great year ahead :)

I made enchiladas last night. The "sauce" I used was leftover black bean soup that I made the night before. Got the idea from Rick Bayless' website. I'm eating the leftovers right now so just thought I'd share. Looks like you guys had fun - your house is looking good. I need to get a doughnut pan!!

That's awesome! Good thing about the donuts, is that they are much easier to make + frost than a cake! Way less time too. :)

I know, right? It's been such a fun week!

August 30, 2011 | Unregistered CommenterAshley
