double washed

Breakfast started with dinner.  Wednesday’s dinner to be exact.

So, we were supposed to go to the rescheduled Phillies vs. Rockies game on Wednesday.  If I didn’t already mention it was because of rain + snow on Tuesday [sick].  Wednesday’s weather was also lovely [joke].  Cold. Gloomy. Wet.  I was hoping for it to get rained out.  Around 6pm it was looking like we were heading down to the stadium, in the sleet + rain.  I had about 17 layers on and more in my bag. 

This was also in my bag.  Dinner at the stadium is just not my cup o’ tea [for many reasons] so I packed this.

  • 2 slices of Rudi’s Organic Multigrain
  • 1/2 banana
  • 2T peanut butter
  • ~1/2T melted cocoa-coco-pnat butter
  • cinnamon!!

I was hoping this would hold me over while at the game.  It should, clocking in around 500+ cals!

Finallllllyyyy the game was canceled and then I got a brilliant idea for breakfast.  I was going to make this into french toast.  It ended up being a major fail. 

  1. I didn’t want to use egg because I could only coat 1 side of the bread, and I didn’t want the raw egg to mix with banana + nut butter and not cook.
  2. I thought I would just dip each side of the sandwich in milk, grease the pan, and brown away.
  3. FAIL.

The bread did not “cook.”  It turned to mush.  My next plan?  Make oats and scrape the pnut butter, cocoa-coco, cinnamon covered bananas into it.  I also ate some of the mushy bread…it tasted like heaven.

Scottish Oats, you have yet to fail me!  I use Bob’s Red Mill for those of you who asked.  I need to order some soon.

Topped with FRESH pecans from Bowyn, maple cinnamon almond butter, and mixed berry conserve.

I had another killer swim today!!  I switched things up a bit from the norm so I don’t get burnt out just doing freestyle.

  • 100m kickboard
  • 100m buoy – arms only
  • 300m breast stroke
  • 300m back stroke
  • 750m freestyle –> I was haulin’!!!
  • 50m kickboard
  • 50m breast stroke

Total workout time = 40-45min 

This felt great but left me RAVenous all day, per usual :)

I got home and made another limeless vanilla smoothie.  I wanted this one pretty + white like Jessica’s.  It was very pretty until I spilled it all over my strawberries. 

Fail.  Now you would think vanilla smoothie + strawberries = delicious, however I hadn’t washed these yet…so no go on that!  Luckily that glass I chose to poor the smoothie in was too small for the whole smoothie.  I drank 1/2 of it right out of the vita-mix.  Oh so classy!!!

After washing + consuming all of those berries, I made a delicious omelette!  This required no flipping or gooey egg mess.

No Fail Omelet:

  1. in a small sauté pan, cook veggies with a  little oil on medium heat
  2. turn heat down to med/low
  3. crack 2 eggs + whisk 
  4. pour over veggies
  5. cover pan with lid or foil
  6. cook until egg has cooked through, no stirring required…promise!
  7. slide out of pan, in 1 piece!

The veggies were perfectly spread throughout this mixture.  It worked perfectly!  I filled it with 1 huge kale leaf and 1 portabella plus uncooked grape tomatoes on top.

I have another recipe to share that I completely pulled out of my arse and it actually turned out!  This was from last night’s dinner.  Since we didn’t go to the game we just popped our crazy peanut butter samiches in the fridge, so I could make something a little more well rounded.

Man was this easy. 

1-2-3 Pasta Sauce!

  • 1, 28oz can, peeled whole tomatoes [drain 1 cup of the liquid]
  • 2 medium garlic cloves
  • 2T olive oil
  • ~1/4t salt [to taste]
  • pepper to taste
  • 1-2t sucanat or pure cane sugar
  • 1T tomato paste
  • 2t oregano
  • 2t basil
  • 1t thyme
  1. Heat a large pot over medium with about 2T olive oil.
  2. While heating, give the tomatoes a quick chop.
  3. Add tomatoes + juice [minus 1c of liquid] to the pot.  Careful, it will spatter!
  4. Add all seasonings + tomato paste.
  5. Bring to a strong simmer but not quite boiling.
  6. Let cook for about 10-15min, stirring once in awhile.
  7. Turn the heat down to a light simmer and cook until desired thickness is reached.

The liquid cooks off and you are left with a very flavorful, hearty pasta sauce.  I love the large chunks of maters!  We ate whole wheat pasta and sauce, with local organic spinach and a little bread on the side.  I was eating this sauce like it was a side dish.  SO good.  If it’s too acidic add a little more sugar while cooking.  Taste as you go!

My next flavor.  Gingerberry!!  This tasted exactly like the name describes.  I really liked it!  I also love that there are only 4g of sugar per serving, none of which are added sugars.

I want to thank all of you for the amazing response about the issues surrounding non-organic strawberries.  You guys are awesome!  I loved reading all of your thoughts on this topic. 

The more we can spread the word –> the more people will buy organic –> increasing demand –> eventually lowering the cost of organics!
