it’s a boy!

Apparently, once a week pancakes are starting to become a trend for me.  After my oats left me in a sweat yesterday, I thought I would change things up a bit.

Coconut flour + flax pancakes!!  Because: they are super easy + super delicious.

I did 1 or 2 things different this time.  The pancakes were fluffier and bigger than usual because of it.

Banana Coconut Flax Pancakes

  • 2T coconut flour
  • 2T ground flax meal
  • 1/2t baking powder
  • pinch of salt
  • 3/4t cinnamon
  • 1/4c + 3T coconut milk [coconut milk is fairly thick, so if you’re using skim, almond, or another thin milk, decrease by 1T]
  • 1 egg
  • 2 egg whites
  • 1/2 ripe banana
  • 1t vanilla
  1. In a blender, blend eggs on high for about 30sec.
  2. Heat + grease a large pan on medium/low heat.  It takes longer, but will give you evenly browned, well cooked cakes!
  3. Add other ingredients to blender and blend on medium speed for about 30sec.
  4. Let sit for a ~5 minutes [important step, so batter thickens] and then pour into the pan.
  5. Cook for a few minutes on each side until evenly browned.

The banana definitely bulked up the pancakes.  They were delicious!

I made a super easy topping.

  • frozen blackberries
  • frozen blueberries
  • frozen strawberries
  1. Cook in a pan over low heat for 5-7min.

It gives you a great sweet topping and not much need for syrup!

But I did add a little maple syrup..probably about 2tsp and it made them too sweet for me with the fruit!  Still tasty but wish I would have left the maple off.

Lauren came over today for a nice relaxing hang out.

We packed pb+j’s and salads and took lunch to the park.  It was gorgeous outside….blue skies, breezy, mid 70’s.  Just lovely.  We had both had busy mornings and busy weekends and were so excited to just go sit at the park and do nothing but chat + eat.

Sometimes, there is nothing better than a pb+j, especially eaten with good company.

It was so much fun.  This food hit the spot, especially after my 40min Sunday swim!  I didn’t keep track of laps at all and just swam for 40min.  I walked to + from the gym as well.  After we ate lunch we walked around most of the park and back home for a total of about 2 miles.

We chomped out our salads with Light My Fire sporks that we use for camping :)

We even made dressing to go.  There is no reason for bottled dressings in my life!

  • balsamic
  • hemp oil
  • walnut oil
  • apple cider vinegar
  • lemon juice
  • salt

Perfect over our summery salads!  I had an error on my point n’ shoot memory card, so unfortunately I don’t have any park photos.

Then, we met with Melissa, Matt + Jake for dinner!!!  We went to California Pizza Kitchen, which I hadn’t been to in a really long time.  They have a lot of awesome veggie options.

Chris got a meatless Mexican style pizza.  It was really good!!  I had about 1/2 of one of the slices.

My salad was amazing.  Roasted veggie goodness!! 

  • asparagus
  • sun dried tomatoes
  • avocado
  • eggplant
  • corn
  • romaine

I had a “half” salad order which is actually quite large!  It’s pretty much the size of a typical salad you’d get at most restaurants.  I hate when restaurants are skimp on their salads.  This one rocked.

Also had a cup of Dakota Split Pea Soup.  YUM.  We ate outside too, which really makes food taste even better :)

My favorite part about this salad is that the veggies are all warm over a chilled romaine.  Love the contrast.

I forgot to tell you all that I’m watching Jake until Tuesday!  Expect to see a lot of cute baby action.  I’m definitely going to try a few new baby friendly recipes. Mmmmm  Chocolate Avocado Pudding anyone?

Honestly, I can’t even tell you how good this kid is.  I’ve never seen a baby quite like him.  After Melissa + Matt left, Chris and I sat outside on the front steps with Jake for abut 30min.  He stayed in my lap the whole time, extremely content.

He absolutely LOVES Kenna + Dakota and they want to be all over him, in a gentle way.  They’re both really really good with him.  Dakota is especially interested and wants to be RIGHT next to him at all times.  She’s always been really good with kids, even with poking + prodding, she just goes with it. 

He went right to sleep tonight, after cuddling with me on the couch for 30min :)  I kind of like him.
