twinkle toes

I decided to prep vegan overnight oats last night but I had a few problems:

  • no rolled oats
  • no chia seeds
  • no ground flax meal [which can be subbed for the chia]

So I had to get creative.

Vegan Scottish Overnight Oats

  • 1/3c Scottish Oats [bob’s red mill brand]
  • 2/3c vanilla almond milk
  • 3/4t cinnamon
  • 1/2t vanilla bean paste
  • 1/4c unsweetened applesauce

The applesauce thickened the oats really well and helped give a mild natural sweetness.  The consistency was perfect!  Can you see the vanilla bean fleks? :)

And then I made….

Blueberry Banana Soft Serve

  • 1 frozen banana
  • 1/3c frozen blueberries
  • 1T almond milk

….which rocked my world.  So super creamy and flavorful.

It was the perfect combo to have this cold breakfast + a hot mug of coffee!

I went on a 1 mile walk to AJ + Jenna’s house and then we went on a 2-3m walk around the neighborhood.  When we got back AJ was showing me his skateboarding skillz.

I was trying to get a cool photo of his shoes + skateboard + shadow.  I photograph food much better!!

Then Jenna showed off her all-start b-balls skillz.  She’s seriously really good!!

My quad has been feeling better and my foot has been healed for about 2 months now so I’m thinking it’s time to get back to running.  Ever so S.L.O.W.L.Y.

I kicked off my VFF’s for some real barefoot action.  When you’re completely barefoot on cement you get the most response from your feet, to land as soft as possible.  It’s pretty amazing!

Then I made asked AJ to take some photos of me barefoot runnin!!

Didn’t hurt at all.  I could tell I was landing even lighter than when I wear my Vibrams.  It was the first time I actually ran on the cement completely barefoot.

I didn’t go far at all, maybe 50yds.

Then I came home + prepped dinner for my parents. 

Clean out the fridge night!

It turned into a fabulous little meal that they both loved.  They tried millet for the first time and really liked it.

I sautéed all the veggies in a little olive oil with a bunch of different seasonings and topped them on the cooked millet.  I also sliced up some avocado.

Then topped the veg with a sunny side up egg :)  Love it!

The 2nd hole from the golf course in our neighborhood is right behind our house.  It’s SO much fun to watch golfers go by all day long.  There are some extremely funny things that golfers do!

S’more time!!!!  SO good with the homemade grahams.  I love the extra thickness of these grahams and awesome crispy crunch.

AJ, Jenna + my aunt are coming over bright + early for GREEN MONSTERS!!!  I’m soooo excited, hehehe. 

AJ + Jenna have asked me [numerous times!]:

  • Is it going to be chunky??
  • Is it healthy?
  • Is there ice cream in it?
  • Wait…it’s going to really be green?
  • Do you taste the spinach?

Hilarious.  Can’t wait!  I’m in desperate need of a shower….gooooooodnight!

I can spot an architect's eye from miles away, but that oats parfait makes it easy. So pristine. What a cheery breakfast!

Some of the best kitchen discoveries and creations happen when you don't have the right ingredients! Also, I love the pics of the soft serve. The presentation is perfect!

1.) Those veggie smores look incredible. I wish I had thought to make some with your extra-delish grahams. I have actually never seen vegetarian marshmallows! Very cool. 2.) Such a wonderful concept with using applesauce in the OO's.! I love applesauce in my hot oats but never thought to add them to cold.

I love that you made the VOO with some applesauce and scottish oats..I have yet to try without flax or chia/rolled oats....looks delicious with the banana blueberry soft serve! The s'mores and dinner looks great too...such fun times with the fam!

Those graham crackers look deelish every time I see them! I'm really interested in the vibrams/barefoot running thing. Interesting to hear that peoples' arches have changed as a result of their feet gaining more muscle.

Haha! I can totally see your vibram foot tan in the running photos--love it. That backyard is so pretty and I love the layered overnight oats photos...I JUST bought a packet of the Chocolate Amazing Grass, I'm really excited to try it out. I had tried a wheatgrass SHOT a long, long time ago (like when I was 8 or something) and it turned me off for life--really tasted like freshly mowed grass, so I'm hoping I like this a lot more ;)

Haha, I love the GM questions! My good is usually filled with veggies and my smoothies and even brownies are tinted green. I always get, do you *really* eat that? Does it *actually* taste good? Haha! I love me some green! Anyway, I've totally been meaning to make your graham crackers. They look delish and I'm definitely looking forward to vegan S'mores. As for the overnight oats, I just jumped on the bandwagon. Bananas and I don't do so well, though, so I used a combo of strawberries and blueberries. I'd recommend it :).

For some reason I couldn't load your site all day, and it was bumming out! I'm glad I finally got it to work, so I could see the beauty of your soft serve overnight oats! Oh my gosh....the blueberries make it so pretty. And what a perfect swirl on the parfait! Major props. :)
