twinkle toes
June 17, 2010 I decided to prep vegan overnight oats last night but I had a few problems:
- no rolled oats
- no chia seeds
- no ground flax meal [which can be subbed for the chia]
So I had to get creative.
Vegan Scottish Overnight Oats
- 1/3c Scottish Oats [bob’s red mill brand]
- 2/3c vanilla almond milk
- 3/4t cinnamon
- 1/2t vanilla bean paste
- 1/4c unsweetened applesauce
The applesauce thickened the oats really well and helped give a mild natural sweetness. The consistency was perfect! Can you see the vanilla bean fleks? :)
And then I made….
Blueberry Banana Soft Serve
- 1 frozen banana
- 1/3c frozen blueberries
- 1T almond milk
….which rocked my world. So super creamy and flavorful.
All layered UP!
With my latest obsession, cacao nibs on top!
It was the perfect combo to have this cold breakfast + a hot mug of coffee!
Am I starting to go crazy, or do my Vibrams look cute with jeans??? hehehe
I went on a 1 mile walk to AJ + Jenna’s house and then we went on a 2-3m walk around the neighborhood. When we got back AJ was showing me his skateboarding skillz.
Love the arms!
I was trying to get a cool photo of his shoes + skateboard + shadow. I photograph food much better!!
Then Jenna showed off her all-start b-balls skillz. She’s seriously really good!!
Swoooosh!
My quad has been feeling better and my foot has been healed for about 2 months now so I’m thinking it’s time to get back to running. Ever so S.L.O.W.L.Y.
I kicked off my VFF’s for some real barefoot action. When you’re completely barefoot on cement you get the most response from your feet, to land as soft as possible. It’s pretty amazing!
Then I made asked AJ to take some photos of me barefoot runnin!!
Didn’t hurt at all. I could tell I was landing even lighter than when I wear my Vibrams. It was the first time I actually ran on the cement completely barefoot.
I didn’t go far at all, maybe 50yds.
It felt great!
If you’re new to the blog [HI new readers!!!] here are a few links to some posts I have done about barefoot running.
Also, if you have a pair of Vibrams, shoot me an email with a photo or 2 for me to add to my VFF Photos page! [edibleperspective AT gmail DOT com]
Then I came home + prepped dinner for my parents.
Clean out the fridge night!
It turned into a fabulous little meal that they both loved. They tried millet for the first time and really liked it.
I sautéed all the veggies in a little olive oil with a bunch of different seasonings and topped them on the cooked millet. I also sliced up some avocado.
Then topped the veg with a sunny side up egg :) Love it!
Stilll goooooiiiiinnnnnnnggggggg….hehehe
milk + dark chocolate [fair trade, organic 365 WF brand]
all-natural, vegetarian marshmallows from WF
firewood
fire in the backyard
My vegan homemade graham crackers!! :)
I just had to make these for my fam while I was home. They loooooved them!
Peaceful summer night.
The 2nd hole from the golf course in our neighborhood is right behind our house. It’s SO much fun to watch golfers go by all day long. There are some extremely funny things that golfers do!
Family time!
The parentals. I showed AJ how to tilt the camera to take the photo…he did awesome!!!
Marshmallow roasting time. Something about roasted marshmallows is just so amazing :)
I like mine burnt!
S’more time!!!! SO good with the homemade grahams. I love the extra thickness of these grahams and awesome crispy crunch.
Major yumness.
AJ, Jenna + my aunt are coming over bright + early for GREEN MONSTERS!!! I’m soooo excited, hehehe.
AJ + Jenna have asked me [numerous times!]:
- Is it going to be chunky??
- Is it healthy?
- Is there ice cream in it?
- Wait…it’s going to really be green?
- Do you taste the spinach?
Hilarious. Can’t wait! I’m in desperate need of a shower….gooooooodnight!

wow, that soft serve + overnight Scottish oats are the most beautiful I've ever seen...
and that egg? on top of the veggies + millet? also beautiful.
I am going to get fitted for vibrams on Saturday... finally! :)
I agree with Kristina - truly the best looking combination ever! How did you get it so neat!?
I came on your blog through Angela - and I am soooo amazed. Your pictures are wonderful and I love the recipes!
In this post I love the skateboardpictures - you really got the right moments!
I can spot an architect's eye from miles away, but that oats parfait makes it easy. So pristine. What a cheery breakfast!
Some of the best kitchen discoveries and creations happen when you don't have the right ingredients! Also, I love the pics of the soft serve. The presentation is perfect!
1.) Those veggie smores look incredible. I wish I had thought to make some with your extra-delish grahams. I have actually never seen vegetarian marshmallows! Very cool. 2.) Stephen's loving all your barefoot running advice. He's looking to really move in that direction -- so keep these kinds of posts coming! 3.) Your photography continues to amaze/inspire me to learn more myself! Thank you!
your layered breakfast looks beautiful!
Such a wonderful concept with using applesauce in the OO's.! I love applesauce in my hot oats but never thought to add them to cold.
Family by the fire, roasting up smores, what a perfect evening! ;)
I agree...SUUUPER cute with jeans!
And I must add: GREAT barefoot running form ;)
Plus, I need to email you pics of my Vibrams. I'm forgetful!!!!

I should really try making them with some kind of soft serve, looks perfect for the hot weather.
Uh, I would be really scared to run barefoot!
Your pictures are fantastic!
And, s'mores over the fire with family? Heaven!
The overnight oats look awesome! You have such a way with food - you make it into an art!!! Hopefully that didn't sound corny ;-)
What a great meal for clean out the fridge night!

Kris
I love that you made the VOO with some applesauce and scottish oats..I have yet to try without flax or chia/rolled oats....looks delicious with the banana blueberry soft serve! The s'mores and dinner looks great too...such fun times with the fam!
It looks like you are having so much fun! Your family is so cute. And your mom is beautiful.
I made blueberry banana softserve yesterday!! Weird....we are on the same page, as usual. :) It was delicious!
Those smores look amazing. I've got to try your graham crackers!!!
oh my! those smores are sinful!!!!! they look AMAZING! i'm going to try your gramcrackers :)
Genius idea: S'more Oats.
Do it!
Oh, don't you worry...there are already plans in the making for that!!!
She is going to LOVE YOU!!!! That is too funny about the BBSS...hehe :) Yes, you must make the grahams!
I know...I thought it was going to be a total fail between the Scottish Oats + the applesauce but it worked!
Thank you!!! Not corny ;)
Well, I knew you would agree..maybe we are BOTH crazy!! hehehe Just send whenever! :)
LOL...it took me a minute to realize what you meant by veggie smores..I was like "did she confused my dinner + dessert???" But now I just realized you didn't mean VEGetables..just vegetarian! hehehe Oooooh I'm glad I have a male fan! And thank you...as does yours! I love your style!
So true! Thanks!!
Hahaha..that is awesome! :)
Thanks so much....it means a lot!
I think because both mixtures were realllly thick, so they didn't slop around too much!
Haha, yup..it was a good foodie day :) Oooooh exciting!!
Look at you! Bold moves. I bumped into a guy last night at a game and he was in shorts and his Vibrams, I asked how he liked the for running, to which he replied: I don't run. Quite the craze.
You are a terrific photographer!
I have been wanting smores for the longest time!!!!!!! Now that I've seen yours, I think I will have some soon!
I am a new reader and love your blog! I have to agree that the Vibrams are very cute with jeans ;)
BTW Scottish Oats rock!
Your family seems amazing - you all look so happy:) ! Looking forward to seeing their reaction to GMs!
I have YET to make your graham crackers - hey, how do you feel about taking on the challenge of making healthy marshmallows??
Have a fun friday
Homemade smores!! yumm
Love the action shots of the family too, great photography!
vanilla bean paste? that is so cool. never even heard of it. that is the prettiest blueberry soft serve! and i really love all the action shots. i'm so jealous of aj's orange shoelaces!!! what a beautiful family...your parentals adopt me too? haha
Wow, the VOO with blueberry banana softserve look AMAMZING! I am for sure trying that very soon!! So pretty and delicous looking at the same time:)
Your layered breakfast looks gorgeous!
I haven't had S'Mores in forever but I love them@
Vibrams kind of weird me out. Something about the toes...
Man, your place is gorgeous! Love everything you ate! I wish my food always looked as pretty. ;)
woohoo for barefoot running...like for real barefoot :) and the overnight oats sound incredible :)
I've been wondering if you could do overnight oats with Scottish oats! Thanks!
PS, nice barefootin' form you got there :)
homemade grahams!! i didnt even know this was possible! the thought scares me since I am no baker by any means, but def something I would love to tackle! you give me hope! :)
hehe, the vibrams do look cute with jeans ;) just like flats! totally coudl wear them to work!!
parfait breakfast sounds perfect!!
Those graham crackers look deelish every time I see them! I'm really interested in the vibrams/barefoot running thing. Interesting to hear that peoples' arches have changed as a result of their feet gaining more muscle.
Haha! I can totally see your vibram foot tan in the running photos--love it. That backyard is so pretty and I love the layered overnight oats photos...I JUST bought a packet of the Chocolate Amazing Grass, I'm really excited to try it out. I had tried a wheatgrass SHOT a long, long time ago (like when I was 8 or something) and it turned me off for life--really tasted like freshly mowed grass, so I'm hoping I like this a lot more ;)
Your and Angela's breakfasts are always so pretty!
What a fun time!! I need to invest in those vibrams!
Haha, I love the GM questions! My good is usually filled with veggies and my smoothies and even brownies are tinted green. I always get, do you *really* eat that? Does it *actually* taste good? Haha! I love me some green! Anyway, I've totally been meaning to make your graham crackers. They look delish and I'm definitely looking forward to vegan S'mores. As for the overnight oats, I just jumped on the bandwagon. Bananas and I don't do so well, though, so I used a combo of strawberries and blueberries. I'd recommend it :).
Have a lovely day!
xox
Now, I follow a lot of vegan blogs, so I see a lot of oatmeal. But, lady, your oatmeal makes me want to EAT oatmeal, not just look at it. Lovely, yummy, gorgeous pics! So glad I found your blog!
Hey girl, love the blog! I found it though Angela's which is a favorite of mine. Not sure how long you're in Ohio (Cleveland?), but I'm new to Columbus and would love to meet up if you're in the area. Have a great weekend :o)
For some reason I couldn't load your site all day, and it was bumming out! I'm glad I finally got it to work, so I could see the beauty of your soft serve overnight oats! Oh my gosh....the blueberries make it so pretty. And what a perfect swirl on the parfait! Major props. :)
