I’m trying to adjust my sleep schedule to Chris’s.  It’s going to take me awhile!!  I was in bed around 11:45 and up at 6:30.  Definitely not enough sleep, but ya gotta start somewhere!  Typically we would go to bed around 1-1:30am and I would get up at 8:30am.  We’ll see how it goes.

This morning I got up, made some guy breakfast ;) stuffed a 1/2 english muffin into my face, then did 20 min of yogadownload.  Then, it was time for more food.

Oats!  I actually made rolled oats today.  Scottish are far superior.

Also, I’ve gotten really used to eating oats from a plate!  I burnt my mouth at least 3 times from this bowl!

Inside the Bowl:

  • 1/3c oats
  • 1/2 banana
  • 1/2c milk, 1/2c water
  • 1t cinnamon
  • 1T chia seeds
  • 1t vanilla

On Top:

The pnut butter was melty delicious.

Then I walked the dogs.  It was soooo nice out this morning.  Cool + comfortable.  Ended up in the 90’s though! 

After walking them I did a 300-400yd barefoot run that felt great!!

Then, I rode my bike [about 4 miles round trip], to the Cherry Creek Farmers Market.  I had to pick up some fresh produce for one of the blog headers I’m designing.  I am reallllly enjoying riding my bike for errands I would normally take the car to do.  I just realized the market is open on Wednesdays and not just on Saturday.  It was nice to restock my veggie drawer with local produce mid-week!

I also got to see one of the sweetest people ever, while I was there.  Maddy, from Love Grown Foods, was working today so I stopped by to say hi.  I love talking to her about life things + granola! :)  She rocks.

When I got home, I refueled with some juicy fruit!  I did some design work and then I was off to the pool!

I came home with 1 thing on my mind.  GREEN MONSTER.  I decided to try a Kale monster!  The reason I haven’t before, is because I like eating whole kale SO much that I hate to hide it in a smoothie.  I’ve been really curious though and wanted to give it a shot.

Hemp n’ Kale Green Monster

  • 1-2c ice
  • ~1c vanilla hemp milk
  • 2 HUGE kale leaves
  • 2T Living Harvest [plain] hemp protein powder
  • 1 banana
  • 1/2t cinnamon
  • 1/2T honey

SO green.  So good.  I loved it!!  You can definitely taste the kale but I didn’t really try to cover it up.  I’m sure you could hide the taste with fruit if you wanted.  I actually really enjoyed the taste.  It was earthy from the hemp protein powder too.  mmmm hemp :)

After swimming and lunch [there was obviously more lunch than this smoothie!], I worked on the computer more and had an exciting conference call!!  I will be sharing the info on that soon.  :)

I also have another new love.  I forget the name of the bakery but WOW is their bread awesome.  So far I’ve had pumpernickel, kalamata olive and this sourdough.  It’s the best sour dough I’ve ever had.  It was so super soft and doughy on the inside and had a little extra kick of sour-ness in comparison to store-bought.

I’ve never tried golden beets before.  Apparently they are sweeter.  I’m super excited to cook with them sometime soon!

I had a lot of fun photographing these market goods today.  I waited til around 7pm and went to our front yard that was out of the direct sun.  The light was pretty ideal.

We went to the rock gym with Ann + Kurtz and then I came home for the rest of dinner!  Sunshine veggie burger to the rescue!!! :)

I’m thinking about eating a pile of sourdough + pnut butter for breakfast…mmmm
