on.the.move.

I’m trying to adjust my sleep schedule to Chris’s.  It’s going to take me awhile!!  I was in bed around 11:45 and up at 6:30.  Definitely not enough sleep, but ya gotta start somewhere!  Typically we would go to bed around 1-1:30am and I would get up at 8:30am.  We’ll see how it goes.

This morning I got up, made some guy breakfast ;) stuffed a 1/2 english muffin into my face, then did 20 min of yogadownload.  Then, it was time for more food.

Oats!  I actually made rolled oats today.  Scottish are far superior.

Also, I’ve gotten really used to eating oats from a plate!  I burnt my mouth at least 3 times from this bowl!

Inside the Bowl:

  • 1/3c oats
  • 1/2 banana
  • 1/2c milk, 1/2c water
  • 1t cinnamon
  • 1T chia seeds
  • 1t vanilla

On Top:

The pnut butter was melty delicious.

Then I walked the dogs.  It was soooo nice out this morning.  Cool + comfortable.  Ended up in the 90’s though! 

After walking them I did a 300-400yd barefoot run that felt great!!

Then, I rode my bike [about 4 miles round trip], to the Cherry Creek Farmers Market.  I had to pick up some fresh produce for one of the blog headers I’m designing.  I am reallllly enjoying riding my bike for errands I would normally take the car to do.  I just realized the market is open on Wednesdays and not just on Saturday.  It was nice to restock my veggie drawer with local produce mid-week!

I also got to see one of the sweetest people ever, while I was there.  Maddy, from Love Grown Foods, was working today so I stopped by to say hi.  I love talking to her about life things + granola! :)  She rocks.

When I got home, I refueled with some juicy fruit!  I did some design work and then I was off to the pool!

Fishin’ around:

  • .75 mile walk to the gym
  • 100m warm up
  • 1500m freestyle ~40min
  • 100m cool down
  • .75 mile walk home

I came home with 1 thing on my mind.  GREEN MONSTER.  I decided to try a Kale monster!  The reason I haven’t before, is because I like eating whole kale SO much that I hate to hide it in a smoothie.  I’ve been really curious though and wanted to give it a shot.

Hemp n’ Kale Green Monster

  • 1-2c ice
  • ~1c vanilla hemp milk
  • 2 HUGE kale leaves
  • 2T Living Harvest [plain] hemp protein powder
  • 1 banana
  • 1/2t cinnamon
  • 1/2T honey

SO green.  So good.  I loved it!!  You can definitely taste the kale but I didn’t really try to cover it up.  I’m sure you could hide the taste with fruit if you wanted.  I actually really enjoyed the taste.  It was earthy from the hemp protein powder too.  mmmm hemp :)

After swimming and lunch [there was obviously more lunch than this smoothie!], I worked on the computer more and had an exciting conference call!!  I will be sharing the info on that soon.  :)

I also have another new love.  I forget the name of the bakery but WOW is their bread awesome.  So far I’ve had pumpernickel, kalamata olive and this sourdough.  It’s the best sour dough I’ve ever had.  It was so super soft and doughy on the inside and had a little extra kick of sour-ness in comparison to store-bought.

It is UHmazing how much more flavor FRESH carrots have in comparison to store-bought.  Wow.

I’ve never tried golden beets before.  Apparently they are sweeter.  I’m super excited to cook with them sometime soon!

I had a lot of fun photographing these market goods today.  I waited til around 7pm and went to our front yard that was out of the direct sun.  The light was pretty ideal.

We were in a hurry to leave for the rock gym, so I put together this fresh + 90% local veggie samich.

The only non local items were the lettuce + raw basil pesto [will post recipe soon!].

We went to the rock gym with Ann + Kurtz and then I came home for the rest of dinner!  Sunshine veggie burger to the rescue!!! :)

I’m thinking about eating a pile of sourdough + pnut butter for breakfast…mmmm

Ohh golden beets? I haven't seen them before! Do they stain your hands yellow like the normal ones stain them purple?
Haha, so refreshing to see a blogger on my kinda time schedule -bed at 12, up at 7.30 :) as opposed to the usual bed at 9, up at 5...

Fun, cheery pictures today! I bought a couple carrots at our farmers' market yesterday and they're already gone. I'm a bunny rabbit ;)

I think we probably have the most opposite tastebuds ever. If I tasted kale or something 'earthy' in my smoothie, I would cry.

It's always tough adjusting to a new schedule but you are so adaptable it shouldn't take long!

For some reason, I loath Kale in my smoothies. I just can't get over the chewy texture. Maybe a vita mix would make it more smooth but mine always come out super gritty..

That sandwich does look amazing with all the layers. It also looks difficult to eat though, I can imagine bit falling out all over the place!!

I love golden beets. I made a two-color roasted (golden and red) beet salad for my final at school, chef loved it! I'll post it on my blog soon :)

I really need to start riding my bike more, it would be awesome to just ride to the farmer's market like you do! :)

Love the fresh sandwich. Looks like something I would dig right into!

I've had golden beets before. I'd say they are slightly sweeter, but I still don't like them. I just can't get myself to like beets!

The best part of the beets is the tops. Gently steam, add butter, S & P, and yummmmmmm.

Yummy looking produce! It'll get easier and easier to get to bed early and wake up early. Typically husband I are laying in bed between 930-10 (me reading, him on laptop) and then we are asleep by 10:30. He wakes up at 5:30 and sometimes I do, but sometimes I sleep until 7ish :)

That veggie sandwich is beautiful. I love how thinly slice the veggies are. Nice and light for the summer!

I love the beet pictures, so pretty. I should try taking pictures at the time around here and see how the lighting is. Aso, that sandwich is not only gorgeous, but looks incredibly healthy and clean (if that description makes any sense). Pesto is awesome on sandwiches, so is tapenade, if you like olives.

You should open up a B&B--it would be incredible.

I LOVE local produce!!! And, I am in love with my CSA. I eat local produce every single day and save SO much money...I have at least cut my grocery bill in 1/2. Love it.

Golden beets are great...tasty and don't make your hands pink!

And I'm such a granny - I'm in bed at 9pm - last night it was 9:45pm and that's LATEEEEE for me. But in my defense, I do get up at 4:45am to hit the gym.

Your sandwich looks amazing. I love love love crusty bread like that -- it is so delicious!

I go to bed as close to 10pm as possible and get up between 6-6:30 (earlier if we get up to run). Anything less than that and I am a zombie all day long!

I love the photos of your market finds. Imperfections in veggies are so delightful.

my hubby and I only have 1 car but we work at the same company and carpool. However, he's in class a few nights a week so I've become very accustomed to riding my bike when I want to go places. Like you, I love it! :)

Those golden beet look absolutely gorgeous, and your sandwich looks amazing! So fresh :-)

Did the Vita chomp the Kale somethin' fierce? I just got one for a birthday present and am slowly learning the ways...do you crank it up to top speed for your smoothies? When in doubt read the instruction manual...I guess.. :)
I think I had a bit too much frozen fruit in mine today--way too thick!

Yes, the Vita totally pulverized it!! I usually start with mine on low at level 6-7 and mash it around with the stick, add more milk if needed and crank it to level 10. Then mash around more [while it's whirling] then put it on High and let it go. Sometimes I don't switch it to high though..but with kale, I definitely do ;)

Kale Green Monsters are my recent favorite! Funny, I was thinking about blogging about them soon too. I don't mind the taste at all either, but I love kale. I had nearly the same hemp, kale drink today--I just love banana with the kale for some reason--but added a couple strawberries as well. Yum.
A trick for those who don't like the "chewiness": blend the kale until smooth(ish) first with a portion of your liquid, then add remaining ingredients & blend again.
