breakfast lovin’

Gooooood morning!  Or, if you’re reading Sunday night, goooooood evening!  How were your weekends?  Ours was a bit crazy!  If you caught my tweet on Saturday, you would have learned…

A house?  What?  Yeah, I haven’t brought it up but we’ve been looking for awhile.  We really didn’t know if buying would pan out or if we’d be renting again.  More info on this soon!  Super exciting + crazy! :)

Something else I’m still excited about is my juicer.  I really thought I’d get annoyed with the cleaning process, but it’s a breeze!  I’ve been juicing once a day and hope to keep it up as much as possible.  Below, is my favorite juice to date.  It doesn’t look pretty, but it was an awesome blend of fruits + veg.  I swear it tasted kind of like rainbow sherbet, but I also might just be warped.

Carrot Apple Cucumber

  • 2 small carrots

  • 1/2 lemon

  • thumb size piece of ginger

  • 1 cucumber

  • 2 small red apples

I was pumped to make baked buckwheat again, but wanted to try something different.  Enter, the pumpkin banana baked buckwheat muffin.

This was a lot more moist than the previous version because I used banana + pumpkin.  It was much softer and not as to-go friendly.  This was more similar to a texture of a very thick banana scramble.

I topped this bad boy with peanut butter + coconut.

And because it was the weekend…maple syrup!!

Pumpkin Muffin Buckwheat Bake [serves 1]

  • 1/4c ground buckwheat groats [untoasted]

  • 1T whole buckwheat groats

  • 1/2-1t cinnamon

  • 1/4t ginger

  • sprinkle of all spice/nutmeg/clove

  • 1/2T vanilla

  • 1/4c pumpkin puree

  • 1/2 banana

  • 1/4t baking powder

  • 1 flax egg [1T ground flax meal + 2.5T warm water, whisked] or 1 large egg

  • 1T chia seeds

  • 2T chopped almonds [optional]

  • 2T almond milk



  1. Preheat oven to 350*

  2. Whisk flax egg together and set aside for ~3-5min.

  3. In a small bowl mash banana until egg-like.

  4. Mix in almond milk, pumpkin, + vanilla with a fork.

  5. Mix in buckwheat, buckwheat groats, spices, baking powder, chia seeds, and almonds.

  6. Mix in flax egg.

  7. Lightly grease a small oven-safe dish, add mixture, smooth, and bake for 30-35 minutes. [I used a personal size soup crock ~2” deep by 5” diameter]


*You can use 1 flax egg or sub 1 white or 1 chia seed egg.

*If you don’t add in chia seeds, there will be too much liquid.  Not sure how much to decrease, but just a heads up.

*You can leave out the banana if you want, and up the liquid to 1/4c instead of 2T.

After breakfast, we were off to house hunt.  Craziness I tell you!  We never thought we’d be putting in an offer!  After that, we headed to Denver for the Love Grown Foods launch party.  They just moved into a HUGE new space because their business is booming.  They are now selling nationwide in over 1300 stores!  I’ve been friends with Maddy [co-owner] since this summer and following her journey has been inspiring.  The business is really taking off!

Maddy is about to take off on a nationwide LOVE tour in their new RV!  How cool…jealous! ;)

First, we checked out the “love pad.”  This is where all of their team works.  Umm, ping pong table, at work?  Yes please!  Love Grown knows how to run a business and have a good time!

Love that they covered the table in granola bags.  So cute!

In the warehouse, were HUGE containers of their high quality ingredients.

It’s crazy that just a few months ago, they were still making the granola in a small kitchen space.

Sweet hairnets, no?  Here are the lovely Alex + Maddy [owners] and the huz + I.  We had a blast talking to these two.  They are full of energy!  And did I mention their granola is k.i.l.l.e.r.??

Congratulations on the house news!! That is fantastic! ;) It's such a great time to buy right now, as opposed to renting. At least here it is. I'm not sure about Colorado but the market in general is record low.

I wish I had known about the Love Grown Foods launch party- I would have liked to go!! (if it was one of those open invite events). Also congrats on the house!!

And just wanted to say that I made your brown rice pudding and it was AMAZING. I devoured it in less than 24 hours and got more coconut milk at the store so I can make more :)
seriously I cannot even believe how good it was. And so easy to make! I kind of want to try a pumpkin version of it too...

Such a great post! First of all, congrats on putting an offer on a house! I hope you get it. My husband and I look SO forward to owning our own house someday especially since living in apartments for so long : )

Second, your baked buckwheat looks AMAZINGLY delicious. Think it would work with oats as the base?

We have the same juicer and I have a few questions for you:

- Love the juice combo you posted - do you put half a lemon right into the juicer, or do you juice separately?
- For the ginger, do you peel and then put in the juicer? Or just toss the whole thing in?
