quickie but goodie

I had WAY too much to do today.  I was up bright + early to get started and never even made it to the gym.  I haven’t had a real workout since Friday and I just feel “bleeeh.”  Missing a few days of working out in the winter feels so much worse than in the summer.  I think it is because even if I don’t work out for a few days in the summer, I’m still outside more and just generally more active.  Although, I will say all my errands and running around like a crazy person probably racked up my calorie burn for the day!

I tried to take a lot of photos today even though I was supa’ bizzy!!! I’m gonna go light on the typing because it’s 10:30 and someone [meeee] hasn’t gotten to packing yet!! eeek!

Even though I felt kind of “meh” about my oatmeal + oatbran combo, I tried it again. MUCH tastier today!!!


  • 1/4c. oatbran + 1/4c. oatmeal
  • 1c. vanilla rice milk
  • 1/2 banana
  • cinnamon
  • dash of maple sugar
  • peanut butter glob

It was sooo super creamy.  There is just something about the creaminess of peanut butter that I enjoy much more than almond butter.  Although I am still a fan of AB!


No crunch today, but I didn’t miss it at all.

Leftover Three Bean + Kale Soup.  Still, so so so good.  I added a little veggie broth to it today.  I also chomped on part of my leftover samich from lunch yesterday.  It was a bit soggy but filled me up!


Can you guess what I’m making for dinner?


A beef tip sirloin crock pot meal!!


I rolled the meat in flour and seared it [on all sides] in some butta’ in a sizzlin hot pan.  This locks in all of the moisture!


Seared and ready for a liquid bath.


Equal parts beef brother + wine, til almost covering top of meat.  Veggies: 3 carrots, 1 celery stalk, 1 large onion


Any red table wine will do. 


Snaaack time.  I was starving.  1/2c plain SF yogurt + 1 delicious pear + cookie FAIL crumbs from last night ;)

I found a new oat filled granola bar!!!  Has anyone tried this??  I just found it at WF the other day and am excited to try it out.  Maybe on the dee’ plain tomorrow? 


You know by now I love this chocolate company, especially because it’s local.  I found another organic bar that they make.  So far, I have seen 2 organic bars by them [which exclude soy lecithin in the ingredients…score!]  The other bar was also dk. chocolate but 61% cocoa content.


Finished off the bottle of wine while cooking.  Here is the start of the dingy dinner photos.

Oven roasted sprouts are AWEsome!!! 

  1. oven at 375*
  2. toss in olive oil, s+p, garlic powder, dried parsley
  3. cook until desired doneness ~30min

Cruncy, sweet, + deeeelicious.


A little vanilla bean hot cocoa to cap off the night.


I finished this post in record time, even with going through and editing all the photos!  It took just under 1hr. 


It’s now 11pm and I still have to dry my hair and pack ALL of my crapola!  I am leaving for the airport at 7:15am…mrrrrrr

I just want to curl up now + sleeeeeep….soon enuff ;)
