what’s poppin’

Amaranth!!! I might be obsessed.  Like I am with the breakfast bakes.

Okay, definitely obsessed.  This was most of my lunch and man did it hit the spot.  Do you love the idea of an endless bowl of cereal?  This is the closest thing you will find.  This bowl is about 7” diameter.  In other words, this is a lot of grub!

A few readers told me that you can actually pop quinoa in the same way as amaranth.  I was really excited to try this out, but burnt 3 batches.  It make a popping noise, but never popped open and burnt in about 30sec.

Actually, forget what I said.  I just checkout out “how to pop quinoa” on ehow.com.  I didn’t fully read the directions.  I don’t think it’s supposed to pop like amaranth.  It says to remove from heat when slightly browned.  So, it was probably popping, it just didn’t turn white and fluffy.  Good to know!

Another reader also told me you can pop sorghum!  I’ve never had sorghum, but am excited to try this out.  It looks like popcorn!  Crazy!!

Amaranth Cereal [serves 1]

  • 1/4c raw amaranth [yields ~1-1.5c popped]

  • 2T walnuts

  • 1/3c blueberries

  • 1 small apple, chopped

  • 1/2t cinnamon

  • shake of ginger

  • unsweetened coconut

  • 1c unsweetened almond milk



  1. Mix spices with popped amaranth.

  2. Add in other ingredients + top with milk.


I had extra amaranth leftover from yesterday, that I stored in a covered bowl.  I bet this would last for 2-3 days, if you want to pop a large batch.  Just remember not to pop more than 2T at a time!

I juiced it, that’s what!

And then Mama Pea twitter-yelled at me, because she said I should EAT it, not JUICE it. hehehe I’m glad she still loves me though!!  And she is totally right, per usual.  ;)  The huge broccoli stem only resulted in 2oz of juice.  This goes to show…listen to yo’ Mama!!!

1 broccoli sten – 2-3c spinach – 1 large green apple – 1/2 lemon – small hunk of ginger – 1/2 English cucumber

p.s. Dairy Reintroduction Day 3 – It’s really hard for me to actually remember to eat dairy now.  I didn’t feel like eating yogurt for a snack, so I ate a serving of sharp white cheddar cheese with dinner.  It was super tasty and I’m feeling no tummy problems at all.  I need to eat a bit more so I can really tell though!
