avocado strawberry + goat cheese sandwich

I am about to show you something that is way too much fun.

And amazingly delicious!

Maybe sandwiches aren’t what you call fun but this may change that.

Remember last week when I was talking about how I only like avocado mixed in things or made into guacamole?  Please disregard that statement.  Apparently for me a sprinkle of salt is the key.

After our Sunday bike ride, gardening, house cleaning, and still being wiped from Saturday’s hike, all of a sudden I needed food fast!  Like right this very instant, fast.

I mashed up an avocado with salt, threw 2 slices of bread in the toaster, and slathered it on.

I know a million people have made avocado toast before.  Probably everyone but me! 

But today we take avocado toast to the next level with a few simple variations.  And now I will be eating this for breakfast, lunch, and dinner, until strawberries are no longer in season.

But then I’ll just move to the next berry that is.

Two variations are hot + two are cold.  Two are vegan + two are not.  Take your pick or make one of each.

I melted a rich + creamy goat’s milk mozzarella over top.  I’m sure a regular goat cheese will work perfectly, it just won’t melt quite the same.  If you can find a goat mozz or goat cheddar, I highly recommend giving it a try!

Open-faced sandwiches used to be a childhood favorite.

But you always have the option to smash it into a sandwich.

Avocado Strawberry + Goat Cheese Sandwich [cold]

  • 2 slices of bread [my favorite GF brand is Udi’s]
  • 1 avocado
  • 4 medium strawberries, thinly sliced
  • 2-4T goat’s milk mozzarella, crumbled
  • 1t lemon juice
  • 1/8t salt
  • black pepper + sea salt to top
  1. Toast the bread and place on a cooling rack [avoids sogginess] to stay crisp but not hot. 
  2. Mash the avocado with a fork and then mash in the lemon juice + salt.
  3. Add as much avocado to the toast as desired and add 1 layer of thinly sliced strawberries.
  4. Top with salt, pepper, and about 1T crumbled goat cheese per slice.

notes: Amount of bread needed will vary depending on desired amount of avocado used + size of bread.  Use more strawberries if needed.  Omit cheese for a vegan option.

Sautéed Strawberry Avocado + Goat Cheese Sandwich [hot]

  • 2 slices of bread [my favorite GF brand is Udi’s]
  • 1 avocado
  • 4 medium strawberries, thinly sliced
  • goat’s milk mozzarella, thinly sliced
  • 1t unrefined coconut oil
  • 1T balsamic vinegar
  • 1t lemon juice
  • 1/8t salt
  • black pepper + sea salt to top
  1. Toast the bread and place on a cooling rack [avoids sogginess] to stay crisp but not hot. 
  2. Turn your oven on to broil.
  3. Mash the avocado with a fork and then mash in the lemon juice + salt.
  4. Add oil to a small pan over medium heat. 
  5. Once hot, add the strawberries + balsamic, cooking for 3-5min until softened but not falling apart.  Stir/flip a few times.
  6. Add as much avocado to the toast as desired and add 1 layer of cooked strawberries.
  7. Top with a thin layer of goat cheese.
  8. Broil until melted, about 1-3min.  If you’re using more of a crumbly goat cheese, be careful it doesn’t burn.

There really is no better fast food than avocado on toast! And adding strawberries and goat cheese....what a great idea. I'll have to give it a go soon, sounds like an amazing combination!
I've definitely done this combo in a salad before but melted between two pieces of bread is even more brilliant! Looks amazing!!

What an awesome sounding combination! I've been on a huge avocado kick lately- and I have to tell you- a little sea salt sprinkled on top is key in my book! I've had a wrap with avocado and eggs (and some veggies) almost every day for lunch over the last two weeks. :)

This looks yummy! I often eat a summer salad with spinach, strawberries, cheese, avocado, and chicken, so I can only imagine that a sandwich form of these things would be delicious. Thanks for planting the idea in my mind. Bring on the fresh strawberries!

this may be a stupid question but does goat milk/cheese still have lactose & casein in it?

Ashley--> Not a stupid question at all! Yes, it still contains lactose + casein, but some people that are not able to tolerate cow's dairy are able to eat goat's dairy. http://cheese.about.com/od/cheesebasics/f/lactose_free.htm

What a genius idea!!! I always eat avocado toast or salads with avocado strawberries and goat cheese, but a sandwich??? this looks amazing!
Looks great! If you like that combo you should try making strawberry guac. (I use a recipe from Healthy Hedonist Holidays by Myra Kornfeld; you can get it in the google books preview). She also uses sliced jicama as chips, and it's so good!

Goat cheese is the one cheese my body seems to do well with and thank goodness because I love the taste of it so much. And sea salt was what made me fall in love with avocados too. So simple.

Ashley--> That's awesome! Just curious if you're able to eat ghee [since the lactose and casein are skimmed off in the process or making it]?

Hi Ashley, just curious if you've ever successfully made a gluten-free sandwich bread? Or if you know of one? I can never find a recipe that doesn't use xanthan gum! Thanks for any help.

Ashley--> Hi Lauren! This isn't like typical bread, but I use it for bread. I'm actually posting another version or two this week. It's dense, but thin, and sturdier enough to hold toppings. Plus it's packed with nutrition, unlike GF sandwich breads you can buy. No gums or yeast! I had to try it as soon as I saw it. I've got leftover avocado, too many strawberries to know what to do with, and goat cheese from my farmers' market this past weekend! The combo is delish, thanks for this genius idea on a way to use up stuff I have leftover :)

i'm eating lunch while reading this and REALLY bummed about that..... ! This sandwich looks WAY better than my ho-hum leftovers for lunch.. beh. I almost stopped eating to go make this sandwich... but I sucked it up and finished my lunch. (It even had avocado in it, but not in this way!!! )

Don't worry, I've never had "avocado toast" either but I do love avocadoes sprinkled with salt so I'm sure it's destined to be made someday soon. And strawberries + goat cheese are such a perfect pair. Great idea!

This looks delicious! I've never had avocado toast either. I've seen it a lot on other blogs lately, but after seeing your version, I don't think I can stand waiting any longer! Do you think this would work well with other kinds of fruit? I have a ripe champagne mango that might just end up in a sandwich!

I made this last night and it is more fabulous than it looks! I used low-sodium ezekial bread and toasted it. The rest was the same. I think I need to have this at least once a week! Thanks for the great idea!!!!

Made this tonight. I hope it doesn't offend you that I added some crumbled bacon to the top. It was absolutely delicious! The perfect summer treat! I'm going to make it again with some blackberries that I have. I'm expecting excellence again. :)

I just made this today (the cold version) and omg it was sooooo good. Except i added a pinch of chili powder and garlic powder to the avocado spread and put it on honey wheat bread. This is now my fav sandwich lol. Goat cheese and strawberries is already a fav snack of mine. I’m so glad you posted this! :)

My husband saw strawberries on sale the other day & bought half the store. I needed a way to use them up before they went bad, so I typed in "strawberry sandwich" figuring that I would see the typical strawberry-cream-cheese sandwich, but then this popped up. Now normally I would see avocado & strawberry & think how disgusting that combo sounds & run... BUT, the combination was so weird that it piqued my curiosity & I literally had to try it. So I made it for dinner & I must say, I will be having this ALL the time! This is my absolute favorite sandwich ever (And I am a sandwich girl, so that's high praise). Thank you SO much for posting this recipe. :)
My husband & I are newly vegans, so we did the hot, cheese free version. It's so nice that this had so little ingredients, can be thrown together in less than 10 minutes AND was delicious. Thanks again! :)

Ate it today outside for lunch with some greens. It was perfect. The whole mix of the sweetness of the strawberries, the creamy goat cheese, avocado and crunchy bread was wonderful. Perfect on a sunny day for a Bar-B-Q.
